Vegetable Donburi Recipe:

Ingredients:

  • 2 cups steamed rice
  • 1 carrot, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup shiitake mushrooms, sliced
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp vegetable oil
  • Salt to taste

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1/2 cup water
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)

Instructions:

  1. Prepare the Sauce: In a small bowl, combine soy sauce, mirin, sugar, sesame oil, and water. Stir well and set aside.
  2. Stir-Fry the Vegetables: In a large skillet or wok, heat vegetable oil over medium heat. Add the carrots and stir-fry for 2 minutes. Add bell peppers and broccoli, continuing to stir-fry for another 3-4 minutes. Finally, add the shiitake mushrooms and cook for 2 more minutes. The vegetables should be tender yet crisp.
  3. Add the Sauce: Pour the prepared sauce over the vegetables. Stir the cornstarch and water mixture once more and add it to the skillet. Stir well and cook until the sauce thickens, about 1-2 minutes.
  4. Assemble the Donburi: Spoon the steamed rice into bowls. Top with the stir-fried vegetables and sauce. Sprinkle with sliced green onions and sesame seeds.
