  • 2 cups cooked rice (preferably day-old)
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup diced bell peppers
  • 2 green onions, sliced
  • 2 eggs, beaten
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • Salt and pepper to taste

  1. Prep the Ingredients: Make sure the rice is cold (day-old rice works best). Dice the vegetables and slice the green onions.
